| Ingredients for 4/5 people: 1 duck |

| Take the duck and stuff generously with whole cloves of garlic, salt and pepper, fennel seeds and sage. Put the duck in a roasting pan with extra virgin olive oil and cook in the oven at 180°/200° for approximately 1 hours. Baste with spoonfuls of stock at intervals when necessary. When cooked, cut into joints and serve with roast potatoes and oven cooked small white onions. Suggested wine : young Chianti Classico |
