DUCK " PORCHETTA " STYLE

Ingredients for 4/5 people:

• 1 duck
• 1 whole garlic
• sage
• 1 tablespoon of fennel seeds
• salt and pepper
• extra virgin olive oil
• stock


Take the duck and stuff generously with whole cloves of garlic, salt and pepper, fennel seeds and sage. Put the duck in a roasting pan with extra virgin olive oil and cook in the oven at 180°/200° for approximately 1 hours. Baste with spoonfuls of stock at intervals when necessary. When cooked, cut into joints and serve with roast potatoes and oven cooked small white onions.
